I'm thinking of learning C programming for PIC using proteus as my simulator, what C assembler should I use?

Anything.

i tried CCS C, hitech C, and C18 sa proteus. And it doesnt matter yung .coff or .hex file ang kailangan ma-open

You can do single-stepping or animation in MPLAB then view the response in the proteus viewer. The proteus viewer is a window in MPLAB
You can also debug directly in Proteus. Make sure you select the .coff file instead of the .hex

sa CCS C, im still using version 3.203.
Im not sure ano ang latest ngayun.
